A classic sweet with deep Mediterranean roots
Turrón is inseparable from Spanish food culture. Traditionally eaten at Christmas, it is, in fact, far too good to save for just one season. This pistachio version is lighter, fresher and slightly more modern than the classic almond nougat, while staying true to its Mediterranean roots.
Simple ingredients, a bit of patience, and no baking needed.
From honey and nuts to festive tables
Nougat has a long history in Spain, strongly influenced by Moorish cuisine. Honey, nuts and egg whites were staples in medieval kitchens, prized for their ability to preserve, travel well and nourish. Over time, almonds became the most common nut in Spanish turrón, especially around Jijona and Alicante, but pistachios fit perfectly into this tradition, adding colour and a gentle, aromatic richness.

- Line a small rectangular tin with baking paper, then spread the mixture evenly. Cover and leave to set in the fridge for at least 2 hours.
